bosco's menu is dictated by the seasons, catch and best available local product and changes daily, however our sample menu will give you a good idea of what to expect.

Suckling Pig

Our succulent suckling pigs are sourced exclusively from Mount Byron organic farm in the Somerset region hinterland, one hour west of Brisbane. Adrian and Steph Sclosa juggle their work and hobby farm activities to bring us this incredible product. We exclusively feature the heritage breed Berkshire, specially bred for Bosco. Each pig, weighing between 10 and 11 kgs, is delivered fresh weekly.

We offer a quarter of these exceptional suckling pigs for $240. This quarter portion provides a generous serving of approximately 1.5 kgs of meat after cooking. This will happily feed 4-6 guests mixed with other Bosco dishes.

To achieve the level of crackling we desire whilst keeping the meat moist, milky and literally falling off the bone we employ a combination of spit roasting and finishing in the Infernillo oven. The Infernillo, a fully wood-fired oven, imparts a unique touch to our dishes with its bottom and top decks fueled by hot coals and embers and able to reach exceptionally high temperatures.

Each serving comes with chickpea puree, ember roasted pickled O'couto peppers from Maleny, bone stock jus, and our flatbreads out of our wood fire oven.
